The Science of Live Foods

As I was sitting down to rest today in between classes, I stared at the basket of veggie stalks which came from the Greens used in our Green Smoothies. In this kitchen, we try to save everything as much as possible for recycling back into Mother Earth.

The basket had been collecting stalks for days, almost a week in fact. And today, it had graduated into a huge heap, almost threatening to spill in a “land-slide”.

Subconsciously, I found myself reaching for a stalk of Kailan (an Asian version on Kale) and chewing on it, enjoying the alkalinity and the action of chewing. It is not what I would call delicious of course, but it seems to have a therapatic effect.

Sometimes I swallow the pulp if it is not too fiborous; othertimes I simply spit it away after I’m done with the juice.

And then it stuck me. The Science of Live Foods, the Science of Being and Living.

The basket of stalks had been there, days, and in Singapore’s humid warm weather, the stalks did not rot. There were merely some minor withering and yellowing.

More than 90% are still greenish colored, and I certainly did not get sick after eating them.

That’s simply because they are ALIVE. Just like me – I AM ALIVE.

These things which have Life Force in them, enhances my own natural Life Force too. These vegan elements which contains life, fits the whole definition of being human food to me. It just falls into simple logic. They nourish my body and preserve my cells as Mother Nature intended it to be – ie. the way which I am made.

What if I were to cook that basket of stalks?

They start to deterioate in hours and by the next day, something smells foul.

And at about the same time as I questioned myself why is something so simple, so hugely missed in our world today, I also got the answer.

The more complicated we eat, the more complicated we think. But the essence of Life is such that, the deepest beauty and solutions of toughest problems like only within Simplicity.

“Truly I say to you, unless you are converted and become like children, you will not enter the kingdom of heaven” (Matt. 18:3)
